Campfire Chili

Ingredients:
1 lb. ground beef
2 med. onions
2 cans kidney beans (undrained)
2 cans diced tomatoes
1 sm. can diced chilies (optional)
1 package of your favorite dry Chili seasoning pack
1 C. Cheddar cheese for garnish
2 T oil

Brown the ground beef in the bottom of a Dutch oven with oil. Add chopped onions and cook until tender. Drain excess fat from oven. Add remaining ingredients and stir. Cover and simmer chili for 1 hour and serve. Add cheddar cheese to top of chili.  Serve with crackers, Fritos or corn bread.


Barbecue Chicken Quesadillas

Ingredients:

2 cups cooked chicken
1 tomato, sliced thin
1 green pepper, finely chopped
8 flour tortillas
1 red onion, thinly sliced
barbecue sauce
1-2 cups grated monterey jack cheese

How to Prepare:

Spread barbecue sauce on tortilla, then top half of tortilla with cheese and the rest of ingredients. Fold the top of the tortilla with no topping on over the top of the filling. Grill on griddle at medium heat until tortilla browns and is crisp. Gently turn and cook the other side. Serve with ranch dressing if desired.

Cheese-stuffed Hot Dogs

Ingredients:

hot dogs
velveeta cheese

How to Prepare:

Using a meat syringe, inject hot dog with velveeta cheese
Place hot dog on end of
roasting stick
Roast over open flame until done.

Wagon Beans

Ingredients:

2 lbs. dry pinto beans
salt pork to taste
2 garlic cloves to taste
chili powder to taste
crushed red pepper to taste
1 large yellow onion
cracked pepper to taste
1 Tbsp. molasses

How to Prepare:

Soak beans overnight rinse well. Chop garlic and onion, soften in boiling water in Dutch Oven, add beans to pot and cover with boiling waterabout 2-in above beans. Cube slat pork and add to pot. Add all other ingredients. Cover loosely, cook until done 2.5 to 3 hours. Check often, may need to add hot water during cooking.
